There are two different types of Belgian waffles, the Liege and the Brussels waffles, and are completely different textures. The Liege is denser and can tolerate more toppings, but is also chewier. The Brussels waffles are lighter and my preferred choice. Most places in Bruges have already prepared waffles, but Chips and Ice made theirs fresh to order. Throughout Bruges there are chocolate shops, pastry shops, and ice cream parlors everywhere. After carb loading we headed up the tower, which is slightly at an angle and very narrow. It was a tight squeeze and very steep so even our Colorado lungs were struggling at the very top. When we got to the top it was a large expanse of red tiled roofs as far as you can see. It was beautiful, but nothing like the movie. The canals also were not as expansive as we had thought, but definitely added atmosphere. Overall we enjoyed Bruges, it is like a medieval fairy tale, but you can easily see everything in a day.
